Osama Jalali is a veteran food writer , researcher , consultant & a celebrity master chef .He is an ambassador of reviving regional Indian cuisine and on a mission to showcase the hidden culinary gems of the rich culinary heritage of our country. He has successfully reviewed more than 2000 restaurants across the globe. Osama is one of the few writers who have not restrained himself to just writing but also loves to work in the kitchen. He curates Frontier , Rampuri, Shahjahani, Heritage & Lost Recipes menus with his wife Begum Nazia Khan and mother Begum Nazish Jalali popularly known as Ammi Jalali for premium hotels and private Daawats across the globe. In last decade he has curated food festivals across the globe with hotel chains like (Oberois/Trident/ Sheraton/JW Marriott / Leela /Ritz Carlton/ Le Meridien and many more…. ) His expertise is in the heirloom and forgotten recipes of Mughal emperors and Nawabs. Born and brought up in the bylanes of Old Delhi, his parental roots belong to a princely estate in Uttar Pradesh called Rampur which is famous for its unique Rampuri cuisine. His researched signature dishes are all curated under a menu called The Mughal Plate.

Osama’s passion for food began at an early age when he used to witness his mother cooking meals in huge amounts in deghs at the feasts organized at their home. The flavours and ingredients used by his mother made him curious to acquire more knowledge as to how these delicacies are prepared. He spent his childhood among khansamas of Delhi & Rampur gharana. That was the time when his mother learnt a lot from royal khansamas. This knowledge eventually got transferred to Osama. He loves to pass his day treating people with food, sharing his food and talking about the joy of eating together.
Osama has been the jury for the Big F awards for the last 6 seasons. He has also been the jury to select the chef of the year by the prestigious Indian Culinary Forum (ICF) for 2 years and the jury for the Living Foods awards.

Apart from judging competitions he has appeared on various food shows on Television(Living Foodz , NDTV , Epic , Aaj Tak) and is known to be the authority on Mughlai cuisine as an ambassador who is on a mission to revive regional Indian dying cuisine.
His Gosht/Mutton Ka halwa has been the most famous recipes he has reinvented from the bygone Mughal era.
Osama has also cooked for various state heads of the country and is known in the circuit to rediscover and document regional culinary heritage of our country.
He has worked extensively on regional Indian cuisine and is writing 4 books on the subject . His FB group Lost recipes of India is the biggest group on social media on the subject.
